Ingredients:

1 can of pineapple chunks (reserve the juice),
1 package of Maria cookies,
500 ml heavy cream,
1 packet of pineapple or unflavored gelatin (12g)
, 1/2 cup shredded coconut,
3 tablespoons sugar,
fresh pineapple for garnish.

Preparation:

1. Whip the heavy cream with the sugar until stiff peaks form.
2. Dissolve the gelatin in the warm pineapple juice.
3. Mix the dissolved gelatin with the whipped cream.
4. In a glass dish, layer cookies, cream, and chopped pineapple.
5. Repeat until the dish is full and refrigerate for 4 hours.
6. Garnish with fresh pineapple and shredded coconut before serving.
