Instructions:
For the cake:
Preheat your oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
Mix dry ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Mix wet ingredients: In another bowl, whisk together the eggs, milk, oil, and vanilla extract until smooth.
Combine wet and dry ingredients: Gradually add the wet mixture to the dry ingredients, mixing until just combined. The batter will be thick at this point.
Add boiling water: Carefully stir in the boiling water (or coffee) to the batter. It will thin out, but that’s perfectly fine—this makes the cake super moist!
Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
For the frosting:
Mix the frosting: In a medium bowl, whisk together the softened butter, heavy cream, cocoa powder, powdered sugar, vanilla extract, and a pinch of salt. Beat until smooth and creamy. If the frosting is too thick, add a little more cream or milk; if it’s too thin, add more powdered sugar.
Frost the cake: Once the cakes are completely cool, spread a layer of frosting on top of the first cake. Place the second cake on top and frost the top and sides of the entire cake.
Optional Garnishes:
Chocolate shavings or sprinkles for extra chocolatey goodness.
Fresh berries like raspberries or strawberries for a fruity contrast.
A drizzle of caramel or ganache for an extra indulgent touch.
Tips:
For a richer flavor, use hot coffee instead of boiling water. It enhances the chocolate flavor.
If you want a slightly denser cake, substitute some of the oil with melted butter.
This cake can also be made as cupcakes! Just bake for 18–20 minutes at 350°F (175°C).
