Instructions:
1. Boil the Eggs:
In a medium pot, place the eggs and cover them with cold water. Bring the water to a boil over medium-high heat. Once it starts boiling, cover the pot with a lid and remove it from the heat. Let the eggs sit for 10-12 minutes.
After they’re done, transfer the eggs to a bowl of ice water and let them cool completely. Once cooled, peel the eggs and set them aside.
2. Prepare the Pickling Liquid:
While the eggs are cooling, place the sliced beet, apple cider vinegar, water, sugar, salt, garlic, peppercorns, bay leaf, mustard seeds, and ground ginger (if using) in a medium saucepan.
Bring the mixture to a boil over medium heat. Stir until the sugar and salt are fully dissolved. Once it comes to a boil, lower the heat and let it simmer for about 5 minutes to allow the flavors to combine.
3. Pickling the Eggs:
Once the pickling liquid has simmered, remove it from the heat and let it cool to room temperature.
Place the peeled eggs in a clean glass jar (you can use a mason jar or any jar with a tight-fitting lid). Add the sliced beets to the jar as well, layering them between the eggs.
Pour the cooled pickling liquid into the jar, making sure the eggs are fully submerged. You can use a spoon to gently press the eggs down to ensure they are covered.
4. Let the Eggs Pickle:
Seal the jar with the lid and refrigerate it for at least 24-48 hours to allow the flavors to develop. The longer the eggs sit, the more flavorful and vibrant they will become, but they’re good to eat after just one day.
5. Serve and Enjoy:
Once pickled, your Beet-Pickled Eggs are ready to enjoy! They make a perfect snack, appetizer, or a colorful addition to salads. The eggs will keep in the fridge for up to 1-2 weeks.
Tips for Success:
Customize the Pickling Liquid: You can adjust the sugar and vinegar ratio depending on how sweet or tangy you like your pickles. For a more intense beet flavor, add more beet slices to the jar.
Add Extra Spices: Experiment with other spices like cloves, cinnamon sticks, or chili flakes to customize the flavor of the pickling liquid.
Use Fresh Beets: For the best results, use fresh beets instead of canned, as they will provide a more vibrant color and fresher flavor.
Serving Ideas: Serve your beet-pickled eggs on their own, sliced on top of salads, or with crackers and cheese. They can also be a great topping for sandwiches or burgers!
