Directions:
1. Preheat your oven:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
2. Prepare the potatoes:
Peel and slice the potatoes thinly (about 1/8 inch thick). You can use a mandoline slicer for even slices.
3. Mix the creamy sauce:
In a large bowl, combine the sour cream, milk, melted butter, minced garlic (if using), and chopped onion (if using). Season with salt, pepper, and paprika. Stir everything together until smooth.
4. Layer the potatoes:
Layer half of the sliced potatoes in the bottom of the prepared baking dish. Spoon half of the creamy sauce over the potatoes, then sprinkle half of the shredded cheddar cheese on top.
5. Repeat the layers:
Add another layer of the remaining sliced potatoes, then top with the rest of the sauce. Sprinkle the remaining cheddar cheese over the top. If you’re using Parmesan cheese, sprinkle it on top for an extra cheesy, crispy finish.
6. Bake:
Cover the dish with aluminum foil and bake for 45 minutes. Then, remove the foil and bake for another 15-20 minutes until the potatoes are tender and the cheese is bubbly and golden brown.
7. Garnish and serve:
Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with chopped fresh parsley for a pop of color and extra flavor, if desired.
Tips:
Make ahead: You can assemble the dish a day in advance and refrigerate it. Just bake it when you’re ready to serve.
Add extras: You can add cooked bacon, green onions, or even a sprinkle of crushed crackers or breadcrumbs on top for added texture.
These cheesy potatoes are the perfect side dish for any main course and are sure to be a favorite at your next meal!
