Instructions:
Prepare the Filling:

In a large pan or wok, heat a little oil over medium heat. Add the garlic and sauté until fragrant.

Add the chopped mushrooms and cook for about 2-3 minutes until softened.

Next, add the shredded cabbage, carrots, and bean sprouts. Stir-fry for 4-5 minutes until the vegetables are tender but still a little crisp.

Add the soy sauce, sesame oil, rice vinegar, and sugar. Stir well and cook for another minute to combine the flavors.

Season with salt and pepper to taste. Remove from heat and let the filling cool to room temperature.

Prepare the Spring Roll Wrappers:

If you’re using frozen spring roll wrappers, thaw them according to package instructions.

Lay one wrapper flat on a clean surface, with one corner facing you (like a diamond shape).

Assemble the Spring Rolls:

Place a small spoonful of the cooled filling near the bottom corner of the wrapper.

Fold the bottom corner over the filling, then fold in the two side corners to create an envelope shape.

Roll the wrapper tightly from the bottom to the top, sealing the top corner with a little water to keep it closed.

Fry the Spring Rolls:

Heat vegetable oil in a deep pan or wok to 350°F (175°C). There should be enough oil to fully submerge the spring rolls.

Fry the spring rolls in batches, turning occasionally, until they are golden brown and crispy (about 4-5 minutes).

Remove the spring rolls and place them on a paper towel-lined plate to drain excess oil.

Serve:

Serve the spring rolls hot with soy sauce or sweet chili sauce for dipping.

Tips:
If you don’t want to deep fry, you can also bake the spring rolls in a preheated oven at 375°F (190°C) for about 20 minutes, brushing them lightly with oil for a crispy texture.

Feel free to experiment with other vegetables like bell peppers or snow peas for extra crunch.

For extra flavor, you can add a pinch of five-spice powder or ginger to the filling.
