Mix the dry ingredients: In a bowl, whisk together the flour, baking powder, and salt. Set aside.
Separate the eggs: Separate the egg whites from the yolks. Put the egg whites into a large clean bowl and set aside for now.
Make the cake batter: In a separate bowl, whisk the egg yolks with the sugar, milk, vegetable oil, and vanilla extract until the mixture is smooth and creamy. Gradually add the dry ingredients and mix until just combined.
Using an electric mixer or whisk, beat the egg whites until stiff peaks form (they should hold their shape and not fall over). This is crucial for the lightness of the cake!
