Cut the Tree Shapes: Use a sharp knife or a cookie cutter to cut the puff pastry into tree shapes. You can create a triangle shape or use a tree stencil if you want a more defined look. For each tree, cut the main triangle and then smaller strips or triangular pieces for the branches.
Add Filling: If you’re making savory trees, spread a thin layer of pesto or sprinkle some cheese directly onto the pastry. You can add ham, spinach, or any filling of your choice. Be sure to leave the edges clear for sealing.
Shape the Trees: Once the filling is added, place the tree shape on a parchment-lined baking tray. Take the smaller triangular or strip pieces of dough and place them along the bottom of the main triangle to form branches. These should slightly overlap, creating a layered, tree-like effect.
Brush with Egg Wash: Beat the egg and brush it over the entire pastry to give it a golden, crispy finish when baked.
Bake the Pastries: Place the tray in the preheated oven and bake for 12–15 minutes, or until the puff pastry is golden and crispy. Keep an eye on them, as oven temperatures can vary.
Garnish: Once the puff pastry trees are done, garnish with fresh herbs like rosemary or thyme for a festive look and added flavor. You can also sprinkle a little sea salt on top for a savory finish.
Serve: Let them cool slightly before serving, or serve them warm. If you want a sweet variation, drizzle with a little powdered sugar or serve with a side of fruit preserves for dipping.
