Prepare the eggs:
Carefully separate the egg yolks from the whites, ensuring you don’t break the yolks. You can save the whites for another use (like making an omelette or meringue).
Gently place the yolks in a bowl of cold water for a few minutes to firm them up a bit. This will help keep them intact while frying.
Set up a breading station:
In one shallow bowl, add the all-purpose flour.
In a second shallow bowl, crack the 2 eggs and beat them lightly.
In a third shallow bowl, add the panko breadcrumbs. You can season them with a pinch of salt and pepper, or even some garlic powder if you like.
Bread the yolks:
Carefully dredge each yolk in the flour, making sure it’s fully coated.
Dip the floured yolk into the beaten eggs, letting the excess drip off.
Coat the yolk with the panko breadcrumbs, pressing gently to ensure it sticks.
Fry the yolks:
Heat about 2 inches of oil in a deep pan or skillet over medium-high heat. The oil is hot enough when a breadcrumb dropped into it sizzles immediately.
Gently lower the breaded yolks into the hot oil using a slotted spoon or tongs.
Fry the yolks for about 1-2 minutes, or until they are golden brown and crispy. Keep an eye on them, as they cook quickly.
Drain and serve:
Once golden and crispy, carefully remove the yolks from the oil and place them on a paper towel to drain excess oil.
Season with a pinch of salt right away while they’re still hot.
Serve:
Arrange the deep-fried egg yolks on a plate and serve with lemon wedges or dipping sauces, if desired.
Be gentle when handling the yolks to avoid breaking them.
You can add herbs or spices to the breadcrumbs for extra flavor.
If you want a more gourmet touch, serve them with a drizzle of truffle oil or sprinkle some parmesan on top.
These deep-fried egg yolks make a perfect appetizer for a party, and their crunchy exterior with rich, creamy yolk inside is sure to impress!
