Prepare the Peanut Butter Filling:
In a bowl, combine the peanut butter and powdered sugar. Stir until smooth and well combined. The mixture should be thick but spreadable.
Melt the Chocolate:
Melt the chocolate chips using a double boiler or microwave. If using a microwave, heat in 30-second intervals, stirring in between, until fully melted and smooth.
Assemble the Cups:
Line a muffin tin with paper liners.
Spoon a small amount of melted chocolate into the bottom of each muffin liner, just enough to cover the bottom.
Add a dollop of the peanut butter mixture on top of the chocolate layer, pressing it down gently to form a small mound.
Cover the peanut butter with another layer of melted chocolate, spreading it out to cover the peanut butter completely.
Chill:
Place the muffin tin in the refrigerator and chill for at least 30 minutes or until the chocolate is set.
Serve:
Once set, remove the cups from the muffin tin and enjoy your homemade peanut butter cups!
Tips:
Customization: You can use dark chocolate for a richer flavor or add a pinch of sea salt on top for a sweet and salty twist.
Storage: Store the peanut butter cups in an airtight container in the refrigerator for up to 2 weeks.
