Instructions:
Prepare the Dough:
In a small bowl, combine the lukewarm milk and sugar. Sprinkle the yeast over the milk and let it sit for 5-10 minutes, or until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Create a well in the center and add the yeast mixture, eggs, and vanilla extract. Mix until a dough begins to form.
Gradually add the softened butter, a tablespoon at a time, and knead the dough until it becomes smooth and elastic. This should take about 8-10 minutes by hand or 5 minutes using a stand mixer with a dough hook attachment.
Once the dough is smooth and elastic, cover it with a clean kitchen towel and let it rise in a warm place for 1-1.5 hours, or until it doubles in size.
Prepare the Filling:
While the dough is rising, mix the raisins, cranberries, brown sugar, and cinnamon together in a small bowl. Set aside.
Shape the Brioche:
After the dough has risen, punch it down gently to release the air. On a lightly floured surface, roll the dough into a large rectangle (about 12 x 18 inches).
Brush the dough with the melted butter, then evenly sprinkle the raisin and cranberry mixture over the surface.
Starting from one long edge, carefully roll the dough into a tight log, making sure the fruit is evenly distributed. Pinch the seams to seal.
Form the Swirls:
Cut the rolled dough into 2-inch slices. Arrange the slices in a buttered 9×5-inch loaf pan, placing them cut-side up to showcase the swirls.
Cover the pan with a kitchen towel and let the dough rise for another 30 minutes, or until the rolls have puffed up.
Bake the Brioche:
Preheat your oven to 350°F (175°C).
Brush the top of the brioche with the egg wash (beaten egg with water).
Bake for 25-30 minutes, or until the brioche is golden brown and sounds hollow when tapped on the bottom. If the top browns too quickly, cover the loaf with aluminum foil and continue baking.
Cool and Serve:
Allow the brioche to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
Tips:
Make Ahead: You can prepare the dough the night before and let it rise in the fridge overnight. In the morning, shape the dough, let it rise for 30 minutes, and then bake.
Add Nuts: For added texture, try adding chopped nuts like walnuts or pecans to the filling.
Serve: This brioche is fantastic served warm with a dollop of butter or as a decadent breakfast treat. It also pairs wonderfully with a cup of coffee or hot chocolate!
