Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish with olive oil or butter to prevent sticking.

2. Cook the Potatoes:
Heat a large skillet over medium heat and add a bit of oil or butter. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until they’re golden brown and tender. Season with a little salt and pepper.

Alternatively, you can cook the potatoes in the microwave. Place them in a microwave-safe dish, cover with a damp paper towel, and microwave for 5-7 minutes or until soft.

3. Sauté the Vegetables:
In the same skillet, sauté the diced onion and bell pepper over medium heat for about 5 minutes, or until they soften and become fragrant. If you’re adding sausage or bacon, cook it now until browned and fully cooked.

4. Prepare the Casserole:
In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Make sure the mixture is well combined.

Add the cooked potatoes, sautéed vegetables, and meat (if using) to the egg mixture, then stir to combine.

Transfer the entire mixture into the greased casserole dish and spread it out evenly.

5. Add the Cheese:
Sprinkle the shredded cheese evenly over the top of the casserole.

6. Bake:
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the cheese is melted and bubbly. If you like a crispy top, you can broil the casserole for an additional 1-2 minutes at the end.

7. Garnish and Serve:
Once done, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh herbs like parsley or chives if desired.

Slice and serve the casserole warm. It’s great on its own or paired with a side salad.
