Instructions:
1. Make the Crepe Batter:
In a mixing bowl, whisk together the flour, milk, eggs, melted butter, salt, and sugar until smooth.

Let the batter rest for about 15-30 minutes to ensure the crepes are light and tender when cooked.

2. Cook the Crepes:
Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with a bit of butter or cooking spray.

Pour a small amount of batter (about 1/4 cup) into the skillet, swirling the pan to evenly coat the bottom with a thin layer of batter.

Cook for about 1-2 minutes, until the edges start to lift and the bottom is golden. Flip and cook for another 30 seconds to 1 minute.

Repeat until all the crepes are cooked, stacking them on a plate and covering them with a clean towel to keep warm.

3. Assemble the Ham and Cheese Crepes:
In a separate skillet, melt a tablespoon of butter over medium heat.

Place one crepe in the skillet, then layer with a slice or two of ham and a generous amount of cheese.

Fold the crepe into quarters or roll it up, covering the filling with the warm crepe.

Cook the filled crepe for 1-2 minutes, until the cheese is melted and the crepe is golden and crispy on the outside.

Repeat with the remaining crepes.

4. Serve:
Serve your Ham and Cheese Crepes warm, with a sprinkle of freshly ground black pepper or some fresh herbs like parsley for added flavor.

Optional:
You can also add a light drizzle of béchamel sauce (a creamy white sauce) over the top for an extra indulgence!

These savory Ham and Cheese Crepes are perfect for breakfast, brunch, or a light dinner. They’re super tasty, cheesy, and packed with flavor in every bite! Enjoy!
