Preheat your oven to 325°F (163°C).
In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
Line a muffin tin with cupcake liners, then spoon about 1 tablespoon of the graham cracker mixture into each liner. Press down firmly with the back of a spoon to form a solid crust.
Bake for 5-7 minutes, then remove from the oven and set aside to cool while you make the filling.
In a large bowl, beat the softened cream cheese until smooth and creamy.
Add the sour cream (or Greek yogurt), powdered sugar, and vanilla extract, and beat until combined.
Add the egg and mix gently until smooth, but be careful not to overmix.
Spoon the cheesecake mixture over the cooled crusts in the muffin tin, filling each about 3/4 full.
Bake for 15-18 minutes, or until the cheesecakes are set but slightly wobbly in the center. They will firm up as they cool.
Allow the cheesecakes to cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely. Once cool, refrigerate for at least 2 hours or overnight for best results.
While the cheesecakes chill, make the strawberry topping by combining the chopped strawberries, sugar, and lemon juice in a small bowl. Let them sit for about 20-30 minutes to macerate and release their juices.
After the cheesecakes are fully chilled, spoon the macerated strawberries onto the center of each mini cheesecake.
Once topped with strawberries, the mini cheesecakes are ready to serve! You can optionally garnish with a mint leaf or a dollop of whipped cream for extra flair.
For an extra smooth cheesecake filling, make sure your cream cheese is at room temperature before mixing.
You can also experiment with different fruits for the topping, like blueberries or raspberries.
If you don’t want to use cupcake liners, you can grease the muffin tin or use mini tart pans.
