No Kitchen Scale Pancakes: Simple, Delicious Pancakes Without Weighing Ingredients
Instructions:
Step 1: Combine Dry Ingredients
In a medium-sized bowl, whisk together the flour, baking powder, sugar, and salt (and cinnamon or nutmeg, if using).
Step 2: Mix Wet Ingredients
In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until well combined.
Step 3: Combine Wet and Dry Ingredients
Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir until just combined. Be careful not to overmix – the batter should still be a little lumpy.
Step 4: Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Once hot, scoop about 1/4 cup of batter for each pancake onto the skillet.
