Instructions:
1. Boil the Potatoes:
Peel and cube the potatoes. Place them in a pot of salted water and bring to a boil. Cook for about 10-12 minutes, or until the potatoes are fork-tender.
Drain the potatoes and mash them until smooth. Let them cool for a few minutes.
2. Make the Fritter Mixture:
Once the mashed potatoes have cooled slightly, add the beaten egg, grated cheese, garlic powder, onion powder, chopped parsley, salt, and pepper. Stir everything together until well combined.
Gradually add the flour, a little at a time, mixing until the mixture holds together but isn’t too sticky. You may need to adjust the flour depending on the moisture content of your potatoes.
3. Shape the Fritter Balls:
With your hands, take small portions of the potato mixture and roll them into bite-sized balls. You should be able to make about 12-16 fritters, depending on the size.
Roll each fritter in breadcrumbs to coat them lightly. This gives them a nice crispy texture when fried.
4. Fry the Fritter Balls:
Heat about 1/2 inch of oil in a large skillet over medium heat. To test if the oil is hot enough, drop a small piece of bread into the oil—if it browns in about 30 seconds, the oil is ready.
Carefully add the fritter balls to the skillet, making sure not to overcrowd the pan. Fry in batches if needed. Cook each fritter for about 3-4 minutes on each side, until they are golden brown and crispy.
Remove the fritters from the oil and drain on paper towels.
5. Serve and Enjoy:
Once the fritters are golden and crispy, serve them immediately with your favorite dipping sauce, such as sour cream, ketchup, or a spicy mayo.
Tips for Success:
Cheese: Adding cheese to the potato mixture adds extra flavor, but feel free to skip it if you prefer a simpler version or want to try different cheese options.
Flour Consistency: If the potato mixture is too wet, add a bit more flour until it can easily hold its shape. However, be careful not to add too much flour, or the fritters might be dense.
Make-Ahead: You can prepare the fritter balls in advance and store them in the fridge for up to 1 hour before frying. This makes them easier to handle when it’s time to cook.
Healthier Version: For a lighter version, you can bake the fritters in a preheated oven at 375°F (190°C) for about 20 minutes, flipping halfway through, until golden brown and crispy.
