Instructions:
Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper or a silicone mat.

Prepare the chicken:

In a shallow dish, whisk together the egg and water. In another dish, combine the Italian breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.

Dip each chicken breast into the egg wash, then coat it in the breadcrumb mixture, pressing to ensure it sticks well.

Prepare the vegetables:

In a separate bowl, toss the sliced peppers and onion with olive oil, and a pinch of salt and pepper.

Arrange on the sheet pan:

Place the breaded chicken breasts on the sheet pan and surround them with the seasoned peppers and onions.

Bake:

Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
