Spanish cured ham (Jamon Iberico or Serrano) – 150g (finely chopped)
Butter – 4 tbsp
All-purpose flour – 1/2 cup (plus extra for coating)
Milk – 1 1/2 cups (whole milk works best)
Chicken broth – 1/2 cup
Nutmeg – A pinch (optional)
Salt – To taste
Black pepper – To taste
Eggs – 2 (beaten, for breading)
Breadcrumbs – 1 1/2 cups (preferably panko for extra crunch)
Olive oil – For frying
