Preheat the oven to 350°F (175°C). Grease and flour a cake pan or line it with parchment paper.
Prepare the spinach: If using fresh spinach, wash and chop it finely. You can sauté it lightly with a bit of oil and garlic or use it raw. If using frozen, make sure it’s well-drained.
Mix the dry ingredients: In a large bowl, combine the flour, baking powder, baking soda, salt, and pepper.
Whisk the wet ingredients: In a separate bowl, beat the eggs with the oil, milk, lemon juice (if using), and grated cheese. Add the spinach, garlic, and onion, and mix well.
Combine: Slowly add the wet mixture into the dry ingredients. Stir until everything is just combined—don’t overmix.
Bake: Pour the batter into the prepared pan and smooth the top. Bake for about 25-30 minutes or until a toothpick comes out clean when inserted into the center.
Cool and Serve: Let the cake cool for a few minutes before slicing. It can be enjoyed warm or at room temperature.

For extra flavor, you can add herbs like oregano, thyme, or basil to the mix.
