Instructions:
1. Prepare the Strawberries:
Freeze-Dried Strawberries: If you’re using freeze-dried strawberries, crush them into a powder using a food processor, or place them in a ziplock bag and crush them with a rolling pin. If you’re using fresh strawberries, simply mash them well with a fork or blend them to a puree. Be sure to remove any excess moisture if using fresh strawberries.
2. Mix the Truffle Base:
In a large mixing bowl, combine the crushed strawberries (freeze-dried or fresh), shredded coconut, sweetened condensed milk (or your chosen sweetener), vanilla extract, and a pinch of salt (optional). Stir everything together until well combined. The mixture should be sticky and easy to shape into balls.
3. Shape the Truffles:
Scoop out small portions of the mixture (about 1 tablespoon per truffle) and roll them into balls with your hands. If the mixture is too sticky, wet your hands slightly to make shaping easier.
4. Coat the Truffles (Optional):
Coconut Coating: Roll the shaped truffles in extra shredded coconut to coat them evenly. This adds texture and enhances the coconut flavor.
White Chocolate Coating (Optional): For a luxurious touch, melt the white chocolate in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth. Dip each truffle into the melted white chocolate and return it to the plate. You can also drizzle some white chocolate over the truffles for decoration.
5. Chill the Truffles:
Place the coated truffles on a parchment-lined tray or plate. Refrigerate them for at least 30 minutes to allow them to firm up.
