Savory Veggie and Cheese Muffins

Ingredients:

  • 1 cup zucchini, grated (squeeze out excess moisture)

  • 1/2 cup grated carrots

  • 1/2 cup chopped bell peppers (any color)

  • 1/2 cup chopped green onions

  • 3/4 cup shredded cheese (any kind, such as mozzarella, cheddar, or a mix)

  • 3/4 cup flour (all-purpose, whole wheat, or a combination)

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon garlic powder (optional)

  • 3 large eggs

  • 1/4 cup milk

  • 2 tablespoons melted butter or olive oil
