π Mediterranean Lemon Chicken Plate (Full Recipe)
β INGREDIENTS (Serves 2β3)
π For the Lemon Chicken

2 chicken breasts
-
2 tbsp olive oil
-
1 tbsp lemon zest
-
3 tbsp lemon juice
-
3 garlic cloves, minced
-
1 tsp dried oregano
-
Β½ tsp paprika
-
Β½ tsp black pepper
-
Β½ tsp salt
-
2β3 lemon slices (for cooking & garnish)
-
1 tbsp chopped parsley (for topping)
π For the Herbed Rice

1 cup basmati or long-grain rice
-
1 tbsp olive oil
-
Β½ tsp garlic powder
-
Β½ tsp salt
-
1 Β½ cups water or chicken broth
-
1 tbsp chopped fresh parsley
-
1 tsp lemon juice
π₯ For the Cucumber Tomato Salad

1 cup chopped cucumber
-
1 cup chopped tomatoes
-
2 tbsp chopped parsley
-
1 tbsp olive oil
-
1 tsp lemon juice
-
Salt & pepper (to taste)
π₯ STEP-BY-STEP INSTRUCTIONS
π STEP 1 β Prepare the Lemon Chicken Marinade

In a bowl, mix:

olive oil
-
lemon juice
-
lemon zest
-
minced garlic
-
oregano
-
paprika
-
salt & pepper
-

Add the chicken breasts and coat well.

Marinate at least 20 minutes, or up to 4 hours for deeper flavor.
π³ STEP 2 β Cook the Chicken
Option A: Pan Fry

Heat a skillet on medium with a little olive oil.

Add marinated chicken and cook 5β6 minutes per side.

Place lemon slices on top while cooking.

Cook until golden and fully done.
Option B: Oven Bake

Preheat oven to 200Β°C / 400Β°F.

Bake chicken for 20β25 minutes.

Garnish with fresh parsley.
π STEP 3 β Make the Herbed Rice

Heat 1 tbsp olive oil in a pot.

Add raw rice & stir for 1 minute.

Add garlic powder, salt, and water/broth.
-
Cover and cook on low for 12β14 minutes.

Turn off heat; add:

lemon juice
-
chopped parsley
-

Fluff with a fork.
π₯ STEP 4 β Prepare the Fresh Salad

Mix the chopped cucumber, tomatoes, and parsley.

Add olive oil, lemon juice, salt, and pepper.

Toss gently.
π½οΈ STEP 5 β Assemble the Mediterranean Plate
On a serving plate:

Add a scoop of herbed rice

Place the lemon chicken on the side

Add the fresh cucumber tomato salad
