π For the Eggplant

2 medium eggplants, sliced into Β½-inch rounds

2 tbsp olive oil

Salt and black pepper to taste
π For the Tomato Sauce

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups crushed tomatoes (or tomato puree)

Β½ tsp dried oregano

Β½ tsp chili flakes (optional)

Salt and pepper to taste

2 tbsp chopped fresh basil or parsley

β Step 1: Prepare the Eggplant

Preheat oven to 200Β°C / 400Β°F.

Brush eggplant slices lightly with olive oil and sprinkle with salt and pepper.

Arrange on a baking sheet and roast for 20β25 minutes, flipping halfway, until golden brown.
β Step 2: Make the Tomato Sauce

In a skillet, heat olive oil and sautΓ© onion until soft (about 3 minutes).

Add garlic and cook for another 30 seconds.

Stir in crushed tomatoes, oregano, chili flakes, salt, and pepper.

Simmer on low for 10β12 minutes until thickened.

In a baking dish, layer roasted eggplant slices and spoon tomato sauce between layers.
