β Step 1: Marinate the Chicken

In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

Add chicken cubes and toss well to coat.

Cover and marinate for 30 minutes to 2 hours (the longer, the better).
β Step 2: Cook the Lemon Rice

Heat olive oil in a pot, add rice, and sautΓ© for 1 minute.

Add chicken broth, lemon zest, and a pinch of salt.
