π₯ Cabbage with Eggs (Simple Stir-Fry Breakfast)
Ingredients (for 2 servings)

Cabbage β 2 cups, finely shredded (about ΒΌ medium head)

Eggs β 3 large

Garlic β 2 cloves, minced (optional but adds great flavor)

Onion β Β½ small onion, thinly sliced (optional)

Salt β Β½ teaspoon, or to taste

Black pepper β ΒΌ teaspoon (adjust to your liking)

Cooking oil β 1Β½ tablespoons (vegetable oil, olive oil, or butter all work)

Soy sauce β 1 teaspoon (optional, for umami flavor)

Green onions or herbs β for garnish (optional)
Instructions
1. Prepare the ingredients

Rinse the cabbage and shred it finely with a knife.

Crack the eggs into a bowl and beat them with a fork or whisk. Add a pinch of salt.

Mince the garlic and slice the onion if using.
2. Cook the cabbage

Heat 1 tablespoon of oil in a medium frying pan or wok over medium-high heat.

Add the garlic (and onion if using). SautΓ© for 30 seconds until fragrant.

Add the shredded cabbage. Stir-fry for 3β5 minutes until it starts to soften but still has a little crunch.

Season with salt, pepper, and soy sauce (if using). Mix well.
3. Add the eggs
You have two ways to do this:

Option A (Scrambled in): Push the cabbage to one side of the pan. Add a little oil if the pan is dry, pour in the beaten eggs, and scramble gently. Once they start to set, mix with the cabbage and cook together for another minute.

Option B (Omelet style): Remove the cabbage to a plate. Pour the beaten eggs into the pan, let them set slightly, then spread the cabbage evenly over the eggs before folding and cooking like an omelet.
4. Taste and finish

Adjust seasoning if needed β a bit more salt, soy sauce, or pepper.

Optionally, drizzle with a few drops of sesame oil or top with chopped green onions.
