Ingredients (for 2 servings)

  • Cabbage – 2 cups, finely shredded (about ΒΌ medium head)

  • Soy sauce – 1 teaspoon (optional, for umami flavor)

  • Green onions or herbs – for garnish (optional)


Instructions

1. Prepare the ingredients

  • Rinse the cabbage and shred it finely with a knife.

  • Crack the eggs into a bowl and beat them with a fork or whisk. Add a pinch of salt.

  • Mince the garlic and slice the onion if using.


2. Cook the cabbage

  1. Heat 1 tablespoon of oil in a medium frying pan or wok over medium-high heat.

  2. Add the garlic (and onion if using). SautΓ© for 30 seconds until fragrant.

  3. Add the shredded cabbage. Stir-fry for 3–5 minutes until it starts to soften but still has a little crunch.

3. Add the eggs

You have two ways to do this:

  • Option A (Scrambled in): Push the cabbage to one side of the pan. Add a little oil if the pan is dry, pour in the beaten eggs, and scramble gently. Once they start to set, mix with the cabbage and cook together for another minute.

  • Option B (Omelet style): Remove the cabbage to a plate. Pour the beaten eggs into the pan, let them set slightly, then spread the cabbage evenly over the eggs before folding and cooking like an omelet.


4. Taste and finish

  • Adjust seasoning if needed β€” a bit more salt, soy sauce, or pepper.

  • Optionally, drizzle with a few drops of sesame oil or top with chopped green onions.
