🥣 Ingredients (Serves 3–4)
🌾 Base Ingredients:

1 cup brown or green lentils, rinsed

1 medium onion, finely chopped

1 large carrot, diced

1 stalk celery, chopped

2 medium tomatoes, diced (or 1 cup crushed tomatoes)

1 tbsp tomato paste

3 tbsp extra virgin olive oil

1 bay leaf

1 tsp dried oregano

Salt & pepper to taste

4 cups water or vegetable broth

Step 1: Sauté the Aromatics

In a large pot, heat olive oil over medium heat.

Add onions, carrots, and celery. Cook for 5 minutes until softened.

Add garlic and tomato paste, sauté another minute for aroma.
Step 2: Add Lentils & Simmer

Add lentils, diced tomatoes, oregano, bay leaf, salt, and pepper.

Stir, bring to a boil, then reduce heat to low.

Simmer uncovered for 30–35 minutes, stirring occasionally, until lentils are soft.
Step 3: Adjust & Finish

For a creamier texture, mash a small portion of the lentils with a spoon and stir them back in.
