Ingredients (Serves 2–3):

2 flatbreads (store-bought naan, pita, or lavash work great)

2–3 tbsp hummus, pesto, or tomato sauce (as a base)

1 cup shredded cheese (mozzarella, feta, or goat cheese)

1 cup assorted vegetables (e.g. bell peppers, cherry tomatoes, red onion, zucchini, mushrooms)

Olive oil, for drizzling

Salt & pepper, to taste

Optional: fresh herbs (basil, cilantro), chili flakes, arugula, or a drizzle of balsamic glaze
