🍞 For the Choux Pastry (Pâte à Choux)
1 cup (240 ml) water
8 tbsp (115 g) unsalted butter, cubed
1 tsp sugar
1 tsp salt
1 cup (125 g) all-purpose flour
4 large eggs
1 egg (for egg wash)
2 tbsp sliced almonds (for topping)
🍯 For the Praline Pastry Cream
2 cups (480 ml) whole milk
6 large egg yolks
1/2 cup (100 g) granulated sugar
2 tbsp cornstarch
1 tbsp unsalted butter
1 tsp vanilla extract
1/2 cup (120 g) praline paste (or make your own with toasted hazelnuts, sugar, and a bit of oil in a food processor)
