3 medium potatoes (about 500g), peeled and grated or mashed
1 red bell pepper, diced
1 yellow or green bell pepper, diced
1 small onion, finely chopped
3 large eggs
Β½ cup (120ml) milk
Β½ cup (50g) grated Parmesan or any cheese you love
Β½ cup (60g) all-purpose flour (or breadcrumbs)
1 tsp baking powder
Salt and pepper to taste
2 tbsp olive oil (plus extra for greasing)
Optional: chopped parsley, thyme, chili flakes, or garlic for extra flavor
