🐟 Mediterranean Baked Cod with Lemon & Herbs

 

🍋 Ingredients (Serves 4)

Main Ingredients

  • 4 cod fillets (about 6 oz each)

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 lemon, zested and juiced

  • 2 tablespoons fresh parsley, finely chopped

  • Salt and pepper, to taste

  • (Optional) Cherry tomatoes or asparagus for serving


👩‍🍳 Instructions

1. Preheat the Oven

  • Preheat your oven to 400°F (200°C).


2. Prepare the Fish

  • Place the cod fillets in a baking dish.

  • Pat dry with paper towels for better browning.


3. Make the Lemon–Herb Marinade

In a small bowl, mix together:

  • Olive oil

  • Minced garlic

  • Lemon zest

  • Lemon juice

  • Chopped parsley

  • Salt & pepper

Stir until well combined.


4. Coat the Cod

  • Drizzle the marinade evenly over the cod fillets.

  • Make sure each piece is well coated.


5. Bake

  • Bake in the preheated oven for 12–15 minutes, or until the fish becomes:

    • Opaque

    • Tender

    • And flakes easily with a fork

(Thicker fillets may need an extra 2–3 minutes.)


6. Serve

Serve warm with:

  • Roasted asparagus

  • Cherry tomatoes

  • Lemon wedges

  • Couscous, quinoa, or rice on the side
