🐟 Mediterranean Baked Cod with Lemon & Herbs
🍋 Ingredients (Serves 4)
Main Ingredients

4 cod fillets (about 6 oz each)

3 tablespoons olive oil

3 cloves garlic, minced
-
1 lemon, zested and juiced
-
2 tablespoons fresh parsley, finely chopped
-
Salt and pepper, to taste
-
(Optional) Cherry tomatoes or asparagus for serving
👩🍳 Instructions
1. Preheat the Oven

Preheat your oven to 400°F (200°C).
2. Prepare the Fish

Place the cod fillets in a baking dish.

Pat dry with paper towels for better browning.
3. Make the Lemon–Herb Marinade
In a small bowl, mix together:

Olive oil
-
Minced garlic
-
Lemon zest
-
Lemon juice
-
Chopped parsley
-
Salt & pepper
Stir until well combined.
4. Coat the Cod

Drizzle the marinade evenly over the cod fillets.

Make sure each piece is well coated.
5. Bake

Bake in the preheated oven for 12–15 minutes, or until the fish becomes:

Opaque

Tender
-
And flakes easily with a fork

(Thicker fillets may need an extra 2–3 minutes.)
6. Serve
Serve warm with:
