Amish Chicken Corn Noodle Supper

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 2 cans (10.5 ounces each) cream of chicken soup
  • 1 can (15 ounces) whole-kernel corn, drained
  • 1 can (15 ounces) cream-style corn
  • 1 cup chicken broth
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 12 ounces egg noodles
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, optional
  • 2 tablespoons butter

Instructions

  1. Prepare the slow cooker
    Lightly grease the inside of a 6-quart slow cooker with butter or cooking spray.
  2. Add the chicken
    Place the chicken breasts in the bottom of the slow cooker. Sprinkle with salt, black pepper, paprika, thyme, and parsley.
  3. Make the creamy corn sauce
    In a bowl, stir together the cream of chicken soup, whole-kernel corn, cream-style corn, chicken broth, diced onion, and minced garlic. Pour the mixture evenly over the chicken.
  4. Slow cook
    Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
  5. Shred the chicken
    Remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker and stir it into the creamy corn mixture.
  6. Cook the noodles
    Prepare the egg noodles separately according to the package directions. Drain well.
  7. Finish the supper
    Stir the cooked noodles, butter, and sour cream into the slow cooker. Add the cheddar cheese if using. Cover and cook on LOW for another 15–20 minutes, just until everything is hot and creamy.
  8. Serve
    Stir gently, taste, and adjust the seasoning. Spoon into bowls and serve warm.

  • For a thicker, casserole-like texture, use slightly less chicken broth.
  • Add diced carrots or celery for extra vegetables.
  • If the mixture becomes too thick, stir in a little warm chicken broth or milk.
  • Rotisserie chicken can be used for a quicker version; add it during the final 30 minutes of cooking.
