🫒🍅 Mediterranean Garlic Shrimp with Cherry Tomatoes (Gambas al Mediterráneo)
⭐ INGREDIENTS (Serves 2–3)
Shrimp

400g large shrimp, peeled & deveined

2 tbsp olive oil
-
4–5 garlic cloves, sliced
-
½ tsp smoked paprika
-
½ tsp red chili flakes (optional)
-
½ tsp black pepper
-
½ tsp salt
-
1 tbsp lemon juice
Vegetables & Add-ins
-
1 cup cherry tomatoes, halved
-
¼ cup pitted Kalamata olives
-
2 tbsp chopped parsley
-
1 tbsp capers (optional)
-
Lemon wedges for serving
Sauce
-
¼ cup white wine or broth
-
1 tbsp tomato paste
-
1 tbsp olive oil
-
1 tsp oregano
🔥 STEP-BY-STEP INSTRUCTIONS
🥘 1. Prepare the shrimp
Pat shrimp dry.
Season with:

salt
-
black pepper
-
paprika
-
chili flakes
Set aside.
🍳 2. Sauté garlic
Heat 2 tbsp olive oil in a pan over medium heat.
Add sliced garlic and cook 30 seconds until fragrant (don’t brown).
🍤 3. Cook the shrimp
Add shrimp to the pan.
Cook 2 minutes per side until pink and slightly golden.
Remove shrimp temporarily to avoid overcooking.
🍅 4. Add cherry tomatoes
In the same pan:

Add tomatoes
-
Cook 2–3 minutes until they soften and release juice
Add olives and capers now (if using).
🍷 5. Create the Mediterranean sauce
Mix in:

tomato paste
-
white wine or broth
-
oregano
Stir and simmer 2–3 minutes until slightly thickened.
🍤 6. Return shrimp & finish
Add cooked shrimp back into the pan.
Stir gently so everything coats evenly.
Finish with:

lemon juice
-
fresh parsley
Turn off heat.
🍽️ SERVING
Serve with:

Herbed couscous

Whole wheat pita
