🥗 Tabbouleh (Fresh Mediterranean Parsley Salad)

 

🥬 Ingredients (Serves 4–6)

For the Salad:

  • 1 cup fresh parsley, very finely chopped

  • ½ cup fresh mint, finely chopped

  • 2 medium tomatoes, small diced

  • 3 Tbsp fine bulgur wheat

  • 2 green spring onions, sliced (or ¼ small red onion finely diced)

For the Dressing:

  • 1 big lemon, juiced

  • 3–4 Tbsp extra virgin olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: pinch of sumac for extra tang


👩‍🍳 Instructions

Step 1: Prepare the bulgur

  • Add bulgur to a small bowl.

  • Pour 3–4 tablespoons of hot water, just enough to cover.

  • Let it soak for 10 minutes until soft, then drain any extra water.

  • Fluff with a fork.


Step 2: Chop the herbs

  • Chop parsley very finely (this is the signature texture).

  • Do the same with the mint and green onions.


Step 3: Mix the salad

In a large bowl, combine:

  • Parsley

  • Mint

  • Tomatoes

  • Soaked bulgur

  • Green onions


Step 4: Add dressing

Whisk together:

  • Lemon juice

  • Olive oil

  • Salt

  • Black pepper

Pour over the salad and toss gently.


🌿 Tips for Perfect Tabbouleh

  • Use lots of parsley; bulgur is just a small background ingredient.

  • Tabbouleh tastes even better after 15–20 minutes of resting.

  • Use the ripest tomatoes for best flavor.

  • Chop the herbs very finely — it gives the salad its authentic texture.


🍽️ How to Serve

  • With grilled chicken, fish, or shawarma

  • With hummus and warm pita

  • As part of a mezze platter

  • Inside wraps or bowls
