Lemon powder is a natural flavor obtained by drying and grinding lemon peels. This versatile ingredient can be used to enrich the flavor and aroma of numerous culinary preparations, both sweet and savory.
Furthermore, it is a great way to avoid waste, using peels that would otherwise be discarded.
Ingredients needed:
Untreated lemon peels (preferably organic)
Method:
Preparation of peels:
Wash the lemons thoroughly under running water to remove impurities and residues.
Dry them with a clean cloth.
Using a potato peeler or a sharp knife, remove the peel, avoiding the white part underneath, which could give the powder a bitter taste.
Drying the peels:
In the sun: Place the peels on a tray covered with a clean cloth and let them dry in the sun for 2-3 days, removing them during the night to avoid humidity.
In the oven: Place the peels on a baking sheet lined with baking paper and bake at 50°C for 2-3 hours, leaving the door slightly open to allow the humidity to escape.
With a dehydrator: Set the temperature to 40-50°C and let them dry for about 5 hours, or until completely dehydrated.
The peels will be ready when they are dry and crunchy to the touch.
