Ingredients:
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 cup granulated sugar
– 1/4 cup brown sugar, packed
– 1/2 cup unsalted butter, softened
– 2 large eggs
– 1 cup sour cream
– 1 teaspoon vanilla extract
– 1 large apple, peeled, cored, and finely chopped
– 1/4 cup brown sugar (for cinnamon swirl)
– 1 tablespoon ground cinnamon (for cinnamon swirl)
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
3. In a large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
4. Beat in eggs one at a time, then stir in sour cream and vanilla extract until combined.
5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
6. Fold in the chopped apple gently.
7. In a small bowl, mix together brown sugar and cinnamon for the swirl.
8. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter.
9. Pour the remaining batter over the cinnamon sugar layer. Sprinkle the remaining cinnamon sugar on top.
10. Using a knife or skewer, gently swirl the batter layers to create a marbled effect.
11. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
12. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
