🐟 Mediterranean Lemon Garlic Baked Fish

 

A light, healthy, and classic Mediterranean dish packed with fresh herbs, olive oil, and citrus flavor.


🧾 Ingredients (Serves 3–4)

For the fish

  • 1 kg white fish fillets (sea bass, cod, tilapia, or snapper)

  • 4 tbsp extra-virgin olive oil 🫒

  • Juice of 1 large lemon 🍋

  • Zest of ½ lemon

  • 5 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp paprika

  • ½ tsp black pepper

  • 1 tsp salt (or to taste)

  • ½ tsp chili flakes (optional)

For topping

  • 1 onion, thinly sliced

  • 1 tomato, sliced

  • ½ cup olives (green or black)

  • Fresh parsley or cilantro, chopped


👩‍🍳 Instructions

  1. Preheat oven
    Set oven to 190°C (375°F).

  2. Prepare marinade
    In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, pepper, and chili flakes.

  3. Marinate fish
    Place fish fillets in a baking dish. Pour marinade evenly over the fish.
    Let rest for 15–20 minutes for best flavor.

  4. Add vegetables
    Arrange onion slices, tomato slices, and olives over and around the fish.

  5. Bake
    Cover loosely with foil and bake for 20 minutes.
    Remove foil and bake another 10 minutes until fish flakes easily.

  6. Garnish & serve
    Sprinkle fresh parsley or cilantro.
    Serve hot with:

    • Mediterranean salad 🥗

    • Roasted vegetables

    • Warm pita or rice
