with Caramelized Brussels Sprouts, Sweet Potato, Butternut Squash, Carrot-Feta, Walnuts & Cranberry-Honey Glaze


📝 Ingredients

Chicken

  • 4 bone-in or boneless chicken thighs or breasts

  • 2 tbsp olive oil

  • Salt & black pepper to taste

  • 1 tsp garlic powder

  • 1 tsp dried thyme or rosemary


Roasted Vegetables

  • 1½ cups Brussels sprouts, halved

  • 1 large sweet potato, cubed

  • 1½ cups butternut squash, cubed

  • 2 large carrots, sliced

  • 2 tbsp olive oil

  • Salt & pepper to taste


Cranberry-Honey Glaze

  • ½ cup fresh or dried cranberries

  • ¼ cup honey

  • 2 tbsp balsamic vinegar or orange juice

  • 1 tbsp Dijon mustard

  • 1 tsp orange zest (optional)

  • ½ tsp cinnamon

  • Pinch of chili flakes (optional)


Toppings

  • ¼ cup crumbled feta cheese

  • ¼ cup chopped walnuts, lightly toasted

  • Fresh parsley or thyme for garnish


👩‍🍳 Instructions

1️⃣ Preheat & Prep

Preheat oven to 200°C / 400°F.
Line a large baking sheet or casserole dish with parchment paper.


2️⃣ Season the Chicken

Pat chicken dry.
Rub with olive oil, salt, pepper, garlic powder, and herbs.
Set aside.


3️⃣ Roast the Vegetables

In a large bowl, toss Brussels sprouts, sweet potato, butternut squash, and carrots with olive oil, salt, and pepper.

Spread vegetables evenly on the baking sheet.
Nestle chicken pieces among the vegetables.


4️⃣ Bake

Roast uncovered for 30 minutes, flipping vegetables halfway.


5️⃣ Make the Cranberry-Honey Glaze

While baking, combine cranberries, honey, balsamic (or orange juice), Dijon, zest, cinnamon, and chili flakes in a small saucepan.

Simmer over medium heat 8–10 minutes until cranberries soften and sauce thickens slightly.


6️⃣ Glaze & Finish Baking

Remove pan from oven.
Brush chicken generously with cranberry-honey glaze.
Drizzle a little glaze over vegetables.

Return to oven and bake 15–20 more minutes, until:

  • Chicken reaches 75°C / 165°F

  • Vegetables are caramelized and tender


7️⃣ Add Final Toppings

Remove from oven.
Sprinkle with:

  • Crumbled feta

  • Toasted walnuts

  • Fresh herbs

Let rest 5 minutes before serving.
