Roasted Garlic Butter Parmesan Potatoes

Crispy on the outside and tender on the inside, these roasted potatoes are tossed in garlic butter and finished with Parmesan for a rich, savory flavor. They’re the perfect side dish for almost any meal.

Ingredients

  • 2 lbs (900 g) baby potatoes, halved

  • 3 tablespoons unsalted butter, melted

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • ½ cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine melted butter, olive oil, garlic, Italian seasoning, salt, and pepper.

  3. Add potatoes and toss until evenly coated.

  4. Spread potatoes in a single layer on the baking sheet, cut-side down.

  5. Roast for 25–30 minutes, then flip potatoes.

  6. Sprinkle Parmesan evenly over the potatoes and return to the oven.

  7. Roast another 10–15 minutes, until golden and crispy.

  8. Garnish with parsley and serve hot.
