Chocolate Covered Strawberry Pie
Ingredients:
1 prepared chocolate cookie pie crust
1 1/2 cups heavy whipping cream
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 cups fresh strawberries, hulled and halved
1 cup semi-sweet chocolate chips
1/2 cup heavy cream (for ganache)
Directions:
In a mixing bowl, beat cream cheese until smooth.
Add powdered sugar and vanilla extract, mixing until fully combined.
In a separate bowl, whip heavy cream until stiff peaks form.
Gently fold whipped cream into the cream cheese mixture until light and fluffy.
Spread the filling evenly into the prepared chocolate pie crust.
Arrange strawberries over the filling in a single layer.
Heat 1/2 cup heavy cream until just simmering, then pour over chocolate chips.
Let sit for 2 minutes, then stir until smooth and glossy.
Pour ganache evenly over the strawberries.
Refrigerate for at least 3 hours or until set before slicing.
