Strawberry Crunch Banana Pudding

Ingredients:

 

For the Banana Pudding:

1/2 cup granulated sugar

1/3 cup cornstarch

1/8 teaspoon salt

2 3/4 cups whole milk

4 large egg yolks

2 tablespoons unsalted butter

1 teaspoon vanilla extract

 

For the Crunch Layer:

1 1/2 cups crushed strawberry-flavored cereal (such as Strawberry Crunch or similar)

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

 

For Assembly:

4-5 ripe bananas, sliced

Whipped cream (store-bought or homemade)

 

Instructions:

 

1. Prepare the Banana Pudding:

– In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.

– Gradually whisk in the milk until smooth.

– Cook over medium heat, whisking constantly, until it thickens and comes to a boil.

– Temper the egg yolks by gradually adding hot milk mixture, then return to the saucepan.

– Cook for 2-3 minutes until thickened.

– Remove from heat, stir in butter and vanilla extract.

– Cool to room temperature.

 

2. Prepare the Crunch Layer:

– Mix crushed strawberry-flavored cereal with granulated sugar.

– Stir in melted butter until mixture resembles coarse crumbs.

 

3. Assemble the Pudding:

– Layer banana pudding, sliced bananas, and strawberry crunch mixture in a dish or glasses.

– Repeat layers, ending with strawberry crunch topping.

 

4. Top and Garnish:

– Spread whipped cream over the top.

– Garnish with banana slices and extra strawberry crunch if desired.

 

5. Serve and Enjoy:

– Chill for 1-2 hours before serving.

– Serve chilled and enjoy!
