Stuffed Mashed Potato Nests

Crispy on the outside, creamy inside, and filled with savory beef — these potato nests are a fun twist on classic comfort food. They look impressive, taste amazing, and are surprisingly easy to make.

Ingredients

For the Potato Nests

  • 3–5 large potatoes

  • 3.5 tbsp (50 g) butter

  • A bunch of fresh dill, chopped

  • Salt, smoked paprika, black pepper, oregano (to taste)

For the Filling

  • 1.1 lbs (500 g) ground beef

  • 1 onion, finely diced

  • 2 garlic cloves, minced

  • 1 red bell pepper, diced

  • 1 large tomato, diced

  • 2.5 oz (70 g) tomato paste

  • A bunch of fresh parsley, chopped

  • 3.5 oz (100 g) mozzarella cheese, grated

Instructions

1. Prepare the Mashed Potatoes

  1. Peel and chop the potatoes. Boil in salted water until fork-tender.

  2. Drain, then mash with butter, dill, salt, paprika, pepper, and oregano.

  3. Let the mashed potatoes cool slightly.

  4. Transfer to a piping bag (or use a spoon) and pipe/shape nests onto a parchment-lined baking tray.

  5. Bake the empty nests at 375°F (190°C) for 10–12 minutes to firm them up.

2. Make the Beef Filling

  1. Heat oil in a pan. Add the onion and sauté until soft.

  2. Add garlic and cook 1 minute.

  3. Add ground beef and cook until browned.

  4. Stir in bell pepper, tomato, tomato paste, salt, pepper, and oregano.

  5. Let simmer for 5–7 minutes until thickened.

  6. Stir in fresh parsley and remove from heat.

3. Assemble & Bake

  1. Fill each potato nest generously with the beef mixture.

  2. Top with mozzarella cheese.

  3. Return to the oven and bake at 375°F (190°C) for 10–15 minutes, or until the cheese is melted and golden.

Serving Suggestions

  • Serve warm with a simple green salad.

  • Add a spoonful of sour cream on top.

  • Great as appetizers or a main dish.
