Ingredients

For the Filling:

  • 8 lasagna noodles, cooked al dente

  • 1 lb fresh crab meat (lump or claw, picked over for shells)

  • 1 cup ricotta cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 1 egg, lightly beaten

  • 2 green onions, finely sliced

  • 1 tbsp fresh parsley, chopped

  • Zest of 1 lemon

  • Salt and black pepper, to taste

For the Creamy Parmesan Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups whole milk (warm)

  • ½ cup heavy cream

  • 1 cup grated Parmesan cheese

  • ½ tsp garlic powder

  • ¼ tsp nutmeg (optional)

  • Salt and pepper, to taste

For Topping:

  • ½ cup shredded mozzarella or Italian cheese blend

  • Fresh parsley, for garnish


Instructions

  1. Prepare the Filling

    • In a bowl, combine crab meat, ricotta, mozzarella, Parmesan, egg, green onions, parsley, lemon zest, salt, and pepper. Mix until well combined.

  2. Make the Creamy Parmesan Sauce

    • In a saucepan, melt butter over medium heat. Whisk in flour to form a roux, cooking for 1–2 minutes.

    • Slowly whisk in warm milk and heavy cream until smooth and thickened.

    • Stir in Parmesan, garlic powder, nutmeg, salt, and pepper. Remove from heat.

  3. Assemble the Roll-Ups

    • Lay out cooked lasagna noodles on a flat surface.

    • Spread 2–3 tablespoons of crab filling over each noodle, then roll tightly.

    • Place seam-side down in a greased baking dish.

  4. Add Sauce & Bake

    • Pour half of the Parmesan sauce into the bottom of the dish.

    • Arrange roll-ups on top, then cover with remaining sauce.

    • Sprinkle with mozzarella cheese.

    • Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake another 10 minutes until golden and bubbly.

  5. Serve & Enjoy

    • Let rest for 5 minutes before serving. Garnish with fresh parsley.

  • Use fresh lump crab for the best flavor, but canned crab works in a pinch.

  • Don’t overcook the noodles — they’ll soften more in the oven.

  • For extra flavor, add a splash of white wine to the cream sauce.
