Ingredients
For the Meatballs
-
1 lb ground beef (or a mix of beef and pork)
-
1/3 cup breadcrumbs
-
1/4 cup grated Parmesan cheese
-
1 egg
-
2 cloves garlic, minced
-
1 teaspoon Italian seasoning
-
1 teaspoon onion powder
-
Salt and pepper, to taste
-
1–2 tablespoons olive oil, for browning
For the Spinach Alfredo Sauce
-
2 tablespoons butter
-
3 cloves garlic, minced
-
2 cups heavy cream
-
1 cup grated Parmesan cheese
-
1 cup fresh spinach, chopped (or more if you prefer)
-
1/2 teaspoon black pepper
-
Salt, to taste
-
Optional: pinch of nutmeg
Instructions
1. Make the Meatballs
In a large bowl, mix the ground meat, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, onion powder, salt, and pepper. Roll into meatballs about 1 inch in size.
2. Brown the Meatballs
Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides. They don’t need to cook fully through yet—just get a nice sear. Remove and set aside.
3. Prepare the Alfredo Sauce
In the same skillet, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and simmer gently. Add the Parmesan cheese and stir until melted and smooth.
4. Add the Spinach
Stir in the chopped spinach. Let it wilt into the creamy sauce. Season with black pepper, salt, and a pinch of nutmeg if using.
5. Combine and Simmer
Return the browned meatballs to the skillet. Cover and simmer for 10–12 minutes, or until the meatballs are fully cooked and the sauce has thickened.
6. Serve
Serve the meatballs and sauce over pasta, mashed potatoes, rice, or with warm garlic bread.
