Strawberry Cheesecake Donuts

Ingredients:

 

2 cups all-purpose flour

 

1/2 cup granulated sugar

 

2 tsp baking powder

 

1/2 tsp salt

 

3/4 cup whole milk

 

2 large eggs

 

2 tbsp unsalted butter, melted

 

1 tsp vanilla extract

 

1/2 cup cream cheese, softened

 

1/4 cup powdered sugar

 

1/4 cup strawberry jam

 

1/2 cup fresh strawberries, diced

 

1 1/2 cups confectioners’ sugar (for glaze)

 

2–3 tbsp milk (for glaze)

 

1/2 tsp vanilla extract (for glaze)

 

Oil for frying (or baking option below)

 

Instructions:

 

Prepare the batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

 

Mix wet ingredients: In a separate bowl, whisk the milk, eggs, melted butter, and vanilla extract. Combine the wet and dry ingredients until just mixed. Do not overmix.

 

Heat oil: Heat oil in a large pot to 350°F (175°C). If baking, preheat oven to 375°F (190°C) and lightly grease a donut pan.

 

Form donuts: Spoon batter into a piping bag and pipe into donut molds or shape small rings for frying.

 

Cook: Fry donuts for about 1–2 minutes per side or bake for 10–12 minutes until golden brown. Let cool on a wire rack.

 

Make the filling: Beat softened cream cheese, powdered sugar, and strawberry jam until smooth and fluffy. Fold in diced strawberries.

 

Fill the donuts: Using a small knife or piping nozzle, fill the cooled donuts with the strawberry cheesecake mixture.

 

Make the glaze: Whisk confectioners’ sugar, milk, and vanilla until smooth. Dip the tops of donuts into the glaze and let them set for a few minutes.

 

Serve: Top with extra strawberry pieces or a drizzle of jam for a bakery-style finish.
