Preparation

  1. Place the flour, sugar, and salt in a large bowl. Mix well to evenly distribute the dry ingredients before adding the liquids.

  2. Add the egg and butter. Start mixing with your hands until the mixture has a sandy consistency and the ingredients begin to come together.

  3. Gradually add the warm water while kneading. Add only enough until you obtain a smooth, elastic dough that doesn’t stick to your hands.

  • To achieve a more airy result, stretch the dough as thinly as possible without tearing it.

  • If you want a softer dough, replace 2 tablespoons of water with warm milk.

  • You can add a teaspoon of alcohol or vinegar to help the fritters puff up better.

  • If you prefer a savory version, omit the cinnamon and sugar and add a touch of oregano or grated cheese.

  • Don’t fry too many at once: this lowers the oil temperature and prevents them from puffing up.

  • Storing them in an airtight jar keeps their crunchy texture for longer.
