Preparation
-
Place the flour, sugar, and salt in a large bowl. Mix well to evenly distribute the dry ingredients before adding the liquids.
-
Add the egg and butter. Start mixing with your hands until the mixture has a sandy consistency and the ingredients begin to come together.
-
Gradually add the warm water while kneading. Add only enough until you obtain a smooth, elastic dough that doesn’t stick to your hands.
-
Knead for 8 to 10 minutes, working the dough until it is smooth, homogeneous and flexible.
-
Cover the dough with a cloth or plastic wrap and let it rest for 30 minutes. This resting time makes it easier to roll out and make thin fritters.
-
Divide the dough into balls about the size of a large walnut. Make sure they are all a similar size so they cook evenly.
-
Roll out each ball of dough with a rolling pin until very thin. The thinner the dough, the crispier the result will be.
-
Heat plenty of oil in a frying pan over medium-high heat. Test the temperature with a small piece of dough: if it bubbles quickly, it’s ready to fry.
-
Fry each fritter one by one, turning them over when they puff up and begin to brown. Cook until they are evenly golden brown.
-
Remove them with a slotted spoon and place them on absorbent paper to remove excess oil.
-
Mix the sugar with the cinnamon and sprinkle it over the still-hot fritters so that the sugar adheres well.
-
Let them cool for a few minutes. As they rest, they become even crispier and tastier.
Tips:
-
To achieve a more airy result, stretch the dough as thinly as possible without tearing it.
-
If you want a softer dough, replace 2 tablespoons of water with warm milk.
-
You can add a teaspoon of alcohol or vinegar to help the fritters puff up better.
-
If you prefer a savory version, omit the cinnamon and sugar and add a touch of oregano or grated cheese.
-
Don’t fry too many at once: this lowers the oil temperature and prevents them from puffing up.
-
Storing them in an airtight jar keeps their crunchy texture for longer.
These crispy fritters are a delicious and easy option for any time of day.
With a simple dough and a touch of sugar and cinnamon, they become an irresistible snack to share.
