Orange Cranberry Bread

Ingredients:

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 tablespoon orange zest
3/4 cup orange juice
2 tablespoons melted butter
1 large egg, beaten
1 teaspoon vanilla extract
1 cup fresh cranberries, coarsely chopped

Directions:

Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.

In a large bowl, whisk together flour, baking powder, baking soda, and salt.

In another bowl, combine sugar and orange zest. Add orange juice, melted butter, egg, and vanilla extract. Mix well.

Stir the wet ingredients into the dry ingredients just until moistened. Fold in cranberries.

Pour batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
