Ingredients:
For the crust:
1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
¼ cup granulated sugar
6 tbsp unsalted butter (melted)
For the cheesecake filling:
3 (8 oz) packages cream cheese (softened)
1 cup granulated sugar
3 large eggs
1 ½ cups sour cream
1 tsp vanilla extract
2 tbsp fresh lemon juice
2 tsp lemon zest (from 1 lemon)
2 tbsp all-purpose flour (optional, helps with texture)
For the lemon topping (optional):
½ cup fresh lemon juice
¼ cup granulated sugar
1 tsp cornstarch (optional for thicker topping)
