Ingredients:
3-4 lb beef chuck roast
2 tbsp olive oil
1 large onion, sliced
3 garlic cloves, minced
4 cups beef broth (or stock)
1 cup red wine (optional, but adds great depth of flavor)
3-4 large carrots, peeled and cut into chunks
3-4 potatoes, peeled and cut into chunks
2-3 sprigs of fresh thyme (or 1 tsp dried thyme)
2 sprigs fresh rosemary (or 1 tsp dried rosemary)
Salt and pepper to taste
1 tbsp tomato paste (optional, but it gives richness to the gravy)
1 tbsp flour (for thickening the sauce)
