Easy Mini Chicken Pot Pies are individual-sized savory pies filled with creamy chicken and vegetables, wrapped in a flaky crust. Perfect for weeknight dinners, parties, or meal prep!

Ingredients (for 1x batch)

  • 2 cups cooked chicken, shredded or diced

  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)

  • 1/3 cup onion, diced

  • 1/3 cup celery, diced

  • 2 tablespoons butter

  • 1/4 cup all-purpose flour

  • 1 cup chicken broth

  • 1 cup milk

  • 1 teaspoon garlic powder

  • 1 teaspoon dried thyme (optional)

  • Salt and pepper to taste

  • 1 package refrigerated pie crusts (or homemade)

  • 1 egg (for egg wash, optional)

Note: Use the scale (1x, 2x, 3x) to easily multiply ingredient amounts.
