🍝 Creamy Pasta alla Boscaiola with Pancetta and Mushrooms

Ingredients:

  • 200g (7oz) pasta (preferably fettuccine, tagliatelle, or penne)

  • 150g (5oz) pancetta, diced

  • 250g (9oz) mushrooms (cremini, button, or a mix), sliced

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 200ml (¾ cup) heavy cream

  • 100ml (⅓ cup) white wine (optional, but adds a nice depth)

  • Parmesan cheese, grated (to taste)

  • Olive oil (for sautéing)

  • Fresh thyme or parsley (for garnish)

  • Salt and freshly ground black pepper (to taste)
