Ingredients:

200g (7oz) pasta (preferably fettuccine, tagliatelle, or penne)

150g (5oz) pancetta, diced

250g (9oz) mushrooms (cremini, button, or a mix), sliced

2 cloves garlic, minced

1 small onion, finely chopped

200ml (¾ cup) heavy cream

100ml (⅓ cup) white wine (optional, but adds a nice depth)

Parmesan cheese, grated (to taste)

Olive oil (for sautéing)

Fresh thyme or parsley (for garnish)

Salt and freshly ground black pepper (to taste)
