When December rolls around, fruit cakes seem to appear in every store—like confetti with a shelf life. And truthfully? Even one is too many. The dense texture and overly sweet, mysterious mix-ins have never won me over.
So when this month’s Foodie Extravaganza theme was fruit cake, I almost passed—until inspiration struck. I reimagined the idea entirely: no candied cherries, no sticky mix-ins. Just juicy apples, warm spices, and a cake that actually feels like something you’d crave.
The result? A cozy cinnamon apple cake that vanished quickly (yes, I shared—but my family didn’t hold back). If you’re not a fruit cake fan, this might just change your mind.
